Privé Gastro Lounge: Molecular Mixology?

When I hear the words molecular and mixology in the same sentence, I am immediately transported to London circa 2010, where the ever-growing trend of explosions, wow-moments and liquid nitrogen were in and classic serving styles were most definitely out.

Similarly, with over-the-top Dubai next door, I am no stranger to Instagram-able foods and film-worthy snaps when said chocolate bomb is presented at the table. So how exactly does Prive Gastro Lounge, the latest addition to Muscat’s nightlife scene, aim to impress its late-night loungers?

Described as ‘sophisticated and glamorous’ and promising ‘the first of its kind in Muscat’ we get ready to explore the hidden gastronomy of Prive Gastro Lounge.

Upon arrival we were presented with a flute of bubbles with miniature balls of nectar that effortlessly popped in the mouth. (Think bubble tea, but of the molecular variety). Novel? Yes, something new for Muscat? Perhaps.

It seems, however, that the wider world may have had to underline the talent of such cooking, bar the gimmicks: ‘We may use modern thickeners, sugar substitutes, enzymes, liquid nitrogen, sous vide, dehydration and other non-traditional means but these do not define our cooking. They are a few of the many tools that we are fortunate to have available as we strive to make delicious and stimulating dishes.’ – Celebrity Chef Heston Blummental.

When speaking with Prive’s Managing Director, Ankush Bhatia, we understood his localized approach to the style of gastronomy and mixology “We aimed to create a chic, yet affordable international experience, with our gastronomical comfort food. It’s not overly complicated. It’s simple things, done well, with an interesting presentation and touch of theatre’.
